Edo was the former incarnation of Tokyo, and the Edo period saw the creation of many of the unique flavors and tastes that can be found in Japanese Today. This is to say that the roots of Japanese cuisine can be found in the cuisine of Edo.And although the flavors created by the vibrant forces of Edo form the origins of Japanese cuisine, today these flavors once again offer a new experience. It is the desire of Namijiya to provide guests with an experience of Edo cuisine that leaves a lasting impression.
As our predecessors could feel the season in the stock and ingredients used in their food, we use cooking techniques from the Edo period that do not use chemical seasonings, and offer a wide variety of dishes that bring out the original flavors of ingredients bestowed upon us by the sea and the mountains.
*Tofu-Hyakuchin : This cookbook was published in the fifth of the second year of the Tenmei era (1782). It classified and evaluated one hundred kinds of dishes into six stages and explained the cooking methods.
