Using our Miso Making Kit (vacuum-packed boiled soybeans, salt, koji, and step-by-step instructions), anyone from children to adults can easily whip up a batch of miso in just one hour!
The workshop takes place at our studio in Fujisato, where you'll have full use of our professional equipment to finish the preparation process.
Once you're done, you get to take your miso home with you. Simply let it age and ferment at your own pace until it reaches peak flavor. There is nothing quite like the taste of miso you made yourself!
How is a 60-minute workshop possible? The secret lies in our preparation. We keep vacuum-packed boiled soybeans and handmade koji flash-frozen and ready to go, allowing you to enjoy a hassle-free miso-making experience any time of year. Everything you need—from the high-quality ingredients to the take-home containers—is fully prepared for you. Thanks to Ms. Awaji’s years of experience and her specially designed kits, you can show up empty-handed and ready to create!
Learn from a True Miso Expert! Your workshop instructor is Keiko Awaji from the "Shirakami no Megumi" Workshop. She is the master producer behind the local favorite, "Shirakami no Megumi Miso."
After working at the Fujisato Food Processing Center, Ms. Awaji has dedicated many years to developing local specialties for the town. In addition to miso-making, she also hosts popular tofu-making workshops.
Ms. Awaji is also the creator of several hit products, including Saburo Donuts and Butter Mochi. Her Saburo Donuts are particularly special; she successfully recreated a long-lost local recipe, bringing back a "nostalgic flavor" that is now a favorite both inside and outside of town.
